Lagered in Foudre + Brettanomyces
This lager is a perfect epitome of a modern Wild Beer. Using a lager base to start with, we aged this for a month in one of our 7000l oak Foudres. Pitching in Brettanomyces continues to age the beer in bottle creating funky characters and drying out the beer. We still have a few cases left which we have be saving especially for ageing.
